Sometimes you just need a little piece of yumminess without feeling guilty, right? I love pina coladas and all the creamy goodness associated with them. But right now, I can’t afford the calories.
I also crave bread whenever I am watching my calories. I LOVE quick breads. They are so moist and have such great flavors!
This bread is no different, except it doesn’t have as many calories, and has a lot of healthy ingredients.
That’s a win-win in my book.
1/2 c coconut oil
1/2 c applesauce
1 c coconut sugar
1/2 c honey
2 tsp pina colada extract
2 c whole wheat flour
1 c all-purpose flour
1/2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1 c coconut milk (+1 Tbsp vinegar)
1 c unsweetened coconut flakes
1 c chopped macadamia nuts
Melt the coconut oil. Place in microwave safe bowl and microwave for 30 seconds at a time until melted.
Blend with the applesauce, coconut sugar, and honey.
Add the eggs and extract.
In a separate bowl sift together the whole wheat and all-purpose flour.
Sift in the baking powder, baking soda, and salt.
Alternate adding the flour mixture and coconut buttermilk. Start and end with the flour.
Stir in the coconut flakes and macadamia nuts.
Bake at 350 for 55-60 minutes, depending on loaf size. I baked mine in small loaf pans so they only needed about 35 minutes.
The bread was moist, sweet, and a little piece of paradise, just like you would expect from a pina colada.
