St. Patrick’s Day Breakfast-Avocado Lime Waffles

St Patrick's Day Breakfast

There have been a lot of St. Paddy’s day breakfast options floating around.  I thought I would try my own.

It’s a risk messing with a family favorite recipe (read about my picky eater here), but I gave these a try and I’m sure I’ll be making them again.

Avocado Lime Waffles

2 eggs

1/2 avocado

1 lime

1 3/4 c milk (I use 1 c almond milk, 3/4 c milk)

1 tsp vanilla

1 3/4 c cake flour (all purpose flour works, too)

1 tsp baking powder

3 tsp sugar

1/4 tsp salt

Directions

Separate the eggs and beat the egg whites until fluffy and stiff peaks form.  Add the avocado, juice from the lime, milk, and vanilla to the egg yolks.  Mash the avocado with a fork then whisk ingredients together.  Sift the flour, baking powder, sugar, and salt together.  Add milk mixture to flour mixture.  Whisk just until combined.  I added a drop of green food coloring at this point to help the green pop.  Fold in the egg whites.  Cook in waffle maker according to directions.

These did not have a strong avocado or lime taste as my family isn’t big on new flavors.  In fact, they tasted very similar to my regular waffle recipe.  These were a touch healthier because the avocado replaced the oil I would have normally used.

To complete the breakfast, I added a rainbow and pot of gold!  I used strawberries, cantaloupe, pear, green apple, blueberries, and red grapes.  There are several other fresh options to make your rainbow: raspberries, mandarin oranges, bananas, kiwi, etc.

Eating a healthy breakfast is a great way to bring luck to your day!
