We are always looking for new foods to try in the morning. My boys get kind of habitual in their breakfast routines. These muffins made quite an impression, so much so, that they have been consumed even beyond breakfast. One of the best parts of these muffins is how fast they whip up. The ingredients are all regularly stocked (well, we keep Nutella on hand all the time), and the portion size is perfect for a quick, early morning “pick me up.”
The recipe was from Sally’s Baking Addiction and instead of only making 8 regular sized muffins, we made them into minis to help with calorie control and to make it easier for little hands to hold. We also wanted more Nutella in every bite! We were able to make 18 mini muffins.
1/3 c unsalted butter
1/2 c granulated sugar
1/2 tsp ground cinnamon
1/2 tsp nutmeg (this is double what the original recipe called for)
1 large egg
1 tsp vanilla
1/2 c milk
1 1/2 c white whole wheat flour
1 1/2 tsp baking powder
1/2 tsp salt
8 tsp Nutella (we ended up using a little more)
Cinnamon Sugar Topping
1/4 c granulated sugar
2 tsp cinnamon
3 T melted butter
Cream butter, sugar, cinnamon and nutmeg. Add vanilla, milk, and egg, mix until well combined. Blend in flour, baking powder, and salt until just combined. Spoon a teaspoonful of batter into the bottom of a cupcake liner. Add a spoonful of nutella and then another teaspoonful of batter on the top. Bake at 425 for 3 minutes (if making minis), then turn temperature down to 350 for another 10 minutes. If you make full-sized muffins, you will need to bake them at 425 for 5 minutes, then turn the temperature down to 350 for 13-17 minutes.
While the muffins are cooling melt butter. In a separate bowl, stir together the cinnamon and sugar. Place the muffins top side down into the melted butter, then place in the cinnamon sugar mixture.
The muffins will stay fresh for several days, in an airtight container. If you want to enjoy them longer, place them in the freezer and pull one or two out the night before for a quick grab the next morning.
