Do you love cupcakes? It seems like in the last few years they have become all the rage, and I am glad. If you like cupcakes, and you like chocolate chip cookies, this is the recipe for you!
On Sunday my husband and I couldn’t decide what we wanted for a treat. He wanted chocolate chip cookies, and I wanted to try a new recipe. We compromised and came up with these tasty bites, chocolate chip cookie cupcakes.
3 sticks butter (12 oz), softened
1 1/4 c granulated sugar
1 1/4 c packed brown sugar
1 1/2 tsp vanilla
3 1/2 c cake flour (all purpose works)
1 tsp baking powder
1/2 tsp salt
Cream butter, granulated sugar, and brown sugar. Let them whip for about 3 minutes. The mixture will look light and fluffy. Add the eggs and vanilla. Let them blend for at least another minute, scraping the sides to ensure they are mixed well. In a separate bowl, stir together the flour, baking powder and salt. Then add the flour mixture to the butter/sugar/eggs mixture. Just mix until blended. Stir in the chocolate chips. Fill the cupcake liners almost to the top and bake at 325 for 22-25 minutes. I filled 24 cupcake liners and used the rest of the batter to make mini chocolate chips for the top of the cupcake.
2 sticks butter (8 oz), softened
3/4 c cocoa powder
2 1/2 c powdered sugar
1/2 tsp vanilla
1 tsp almond
1/4 c chocolate almond milk
Dash of salt
Whip the butter for about 5 minutes. The butter will turn almost white and will be very fluffy. Add the cocoa powder and powdered sugar. Stir on low for a minute until it just starts to combine. Add the flavorings and allow to combine until it looks like fudge. Add the milk slowly, and add more or less based on desired consistency. Allow the frosting to whip for another minute or more.
Once the cupcakes are cooled, add the frosting, and top with one of the mini cupcakes. Then enjoy with a tall glass of milk!
