Not all of us are in sunny Hawaii, and where I live it seems to be the time of year when the flu and cold bugs are out to get us! Running noses are no fun, and sick kids are even worse. But if mom gets sick…well the whole house shuts down. Am I right? So, protect yourself with this anti-oxidant rich, and really delicious smoothie!
Green Spinach Smoothie
- 1 Cup Frozen Cherries
- 2 Cups Frozen Mixed Fruit
- 2-3 Cups 100% Apple Juice
- Spinach (half a bag or so)
When I make this smoothie, I start by putting my frozen fruit in, then I put the apple juice in until the fruit is about half way covered. That is what works for my blender and for the consistency I like, but really you might have to experiment to figure out what works for you. Then I blend it up. After I blend it, I add in spinach to the top of the blender. I blend it again. Then I fill the blender with spinach again, and sometimes more juice, if the blender needs it. Then I blend again. I do this until I reach the nice green consistency that I like. I don’t want my smoothie to look like diahrrea, and the more iron rich spinach I can get, the better. My kids love it, the flavor is great, and it is so easy to make!
For a little variation you can always add a banana, which makes it sweeter and thicker, or some mango or strawberry. I sometimes toss in a whole orange or tangerine (peeled of course) to get a little zing. But the basic recipe above is a win every time.
