Hi, I am Rachael! I like long walks on the beach, a clean kitchen, and watching Netflix while laying in bed and drinking a hot chocolate with lots of cream… lots of cream. I started Travel Parent Eat as a fun way to talk about the things I love most other than my family. I have four children, 2 boys, 2 girls, and have been married to my hubby for almost 11 years now. I am a work from home mom (writing and editing), and despite the craziness of driving kids all over from practices to games, recitals, and competitions I wouldn’t trade it.
My favorite thing to do, talk about, and spend money on is travel. My hubby and I try to go somewhere big (i.e. International) once a year, just the two of us! Thank you family and friends for always helping us out so we can make this happen. We also love taking our kids with us while we travel. In fact, a few years ago we decided as a family to skip the mounds of presents at Christmas and instead take a trip. It is my favorite tradition we have. My favorite way to travel with kids is cruising (so stress free), but I am always up for a road trip! If you want to talk travel, know my secrets for getting deals, or talk about how we can afford international trips yearly on a less-than-stellar income, I would love to talk! But don’t worry, I will post on all those things eventually.
I love to cook, which is good because I do it a lot in order to make the lifestyle we want to lead affordable. Until about a year ago, I couldn’t bake at all. Like at all. A box mix was too much for me. Total fail. EVERY. SINGLE. TIME. Mostly because I can’t stick to a recipe. I always have to tweak something. I don’t take failure well, so I decided to do something about it, and started baking, reading, watching Food Network, and trying to learn the science behind baking. Now I bake, a lot. Too much. And I am pretty good at it. But I don’t just bake. I poach, I grill, I pickle, I can, I stir fry. I cook. You can find my recipes on my food blog Eazy Peazy Mealz. I am pretty passionate about making freezer meals, because they are my lifesavers for the crazy nights and busy days that come with being a working mom.
I am a holiday freak. I seriously love the holidays so much. Every holiday. It doesn’t matter which one. I don’t always go overboard, but I like to make the holidays exciting for my kids, memorable, and to spend time together as a family. I think Easter may be my favorite. Weird right? But I always attend a basket auction to support one of my favorite things (education), and do one of my favorite things (try to get a deal)! But of course Halloween, Christmas, Flag Day… okay, not so much flag day.
These guys are my life! And my sweet baby CC. I love to bowl, read, write, and dance in the car. I love my friends. I love God. And I am a devout Mormon. I even got my degree in English and Editing from the ultimate Mormon school- BYU. And I am proud of it. I think moms are wonderful and often under appreciated, so I am so excited about this Mother’s May and the opportunity to recognize so many amazing people!
